Oolong teas are neither green nor black, but somewhere in between. They are made from tea leaves that have undergone partial enzymatic oxidation, thereby creating a broad range of flavor and aromatic profiles. The flavor of fresh juicy peaches enhances the overall sweetness natural to this special oolong tea. After the tea leaves in this oolong have been harvested, they undergo an eight-step drying and curing process. Grown and cultivation has been a way of life for over 1700 years. This finest high mountain grown oolong offers the most complete tea drinking experience with the perfect balanced freshness and the full-bodied depth of a proper cup of tea. An exceptional cup made even more entrancing with an enveloping teasing peach richness that is pure, floral and refined.
A descendent of oolong varieties taken from Jian’ou in China’s Fujian Province, Tung Ting was brought to the eponymous central Taiwan Mountain in the mid-1800s. The tea name means “frozen summit”, in reference to what was, at the time, one of the highest elevation tea gardens in Taiwan. Today, tea is grown at far higher elevations in Taiwan, but Tung Ting retains its reputation as one of the first Taiwanese teas. Our Tung Ting was gathered at a little over 800 meters above sea level, in an area outside Lugu, Nantou County. We source exclusively winter harvested leaves for their fragrance and amazing taste. The tea is then lightly oxidized to accentuate its fresh orchid and gardenia notes.
